Chicken Salad

Diet - CKD, Dialysis, Diabetes

Recipe submitted by DaVita renal dietitian Joyce from Pennsylvania.

Portions:  4  
Serving size:  1 cup

Ingredients

  • 1-1/2 cups cooked chicken, cubed
  • 1/2 cup celery, diced
  • 2 cups apples, diced
  • 3/4  cup seedless grapes, cut in half
  • 1/4 cup mayonnaise
  • 1/4  teaspoon ground cinnamon
  • 1/2  teaspoon lemon juice

Preparation

  1. In a large bowl, combine chicken, celery, apples and grape halves.
  2. Add mayonnaise, cinnamon and lemon juice. Stir to coat ingredients.
  3. Chill at least 30 minutes before serving.

There is mayonnaise in these recipes and mayonnaise has salt and I cannot have salt. Why would you use something with salt in it even at the amount in this recipe? Moderator Note: You could use a low sodium mayonnaise instead or regular to further reduce the sodium. Since one portion is below 140 mg sodium it is still considered to be a low sodium dish with the regular mayonnaise.

this is one of my favorites.its a quick make & to keep on hand for a quick lunch or sandwich for work protein & fruit makes for a tasty meal
