Meat and Rice Balls

 Diet - Dialysis, Diabetes

Recipe submitted by DaVita renal dietitian Ken from Missouri. 

Portions:  4

Serving size: 3 ounces or 6 meat balls 

Ingredients

  • 1 pound lean ground beef
  • 1 large egg
  • 1 cup instant white rice
  • 3/4 teaspoon Mrs. Dash® herb seasoning blend
  • 2-1/4 cups water

Preparation

  1. In a large bowl, mix ground beef, egg and rice.
  2. After thoroughly mixed, roll into 24 small balls.
  3. Brown balls in skillet on all sides.
  4. Mix the Mrs. Dash® herb seasoning with in the water.
  5. Carefully pour the water and Mrs. Dash mixture in the skillet with the meatballs.
  6. Bring water to a boil.
  7. Cover and simmer for 20 to 30 minutes, rotating balls on all sides.

I made this recipe with regular long grain rice as I had no instant rice available and it came out great. In my next attempt, I will season the meat before making the meatballs as they were a little bland in the middle. As a side note, I would love to see a recipe box where members can save recipes for later use so you don't have to constantly search for the same recipes over and over again.
